One of the most influential gastronomic congresses in the world is back.
Madrid Fusión de Alimentos de España will celebrate its 21st edition under the slogan "Sin límites. No limits", once again welcoming some of the most renowned chefs on the international scene.
The congress will examine today’s global gastronomy, the new emerging concepts and its multicultural nature, as well as the challenges the sector is currently facing. This year's edition will focus on the world of haute cuisine without borders.

Madrid Fusión dates and location
The Madrid Fusión congress will be held at the IFEMA exhibition centre in Madrid on 23, 24 and 25 January, with several stages, a main auditorium, and a large exhibition space in Pavilion 14.
How to get to Ifema
The Ifema venue is located at Avenida del Partenón, 5 in Madrid, which you can access easily by public transport:
- Metro (Line 8)
- Bus (Lines 73, 112 and 122, 828)
- Taxi (supplement of 3€ to access the venue)
You can also access Ifema by private car, as there are several parking areas where you can leave your vehicle.
Madrid Fusión 2023 Agenda
Madrid Fusión 2023's focus will be, as it is every year, to explore new trends and give some of the best professionals in international gastronomy the opportunity to share their knowledge.
The key themes of this edition will be remote restaurants, establishments located in unlikely places such as Koks (Faroe Islands) and Proyecto Mil (Peru), urban kitchens such as Kitchen Table (United Kingdom) and river fish-based cuisine such as that of Taberna Ó Balcão (Portugal) and Teru Sushi (Japan).
The main stage will host some of the great chefs from around the world as speakers, such as the Italian Massimiliano Alajmo, from restaurant Le Calandre, the youngest to achieve three Michelin stars at the age of 28.
Part of the Madrid Fusión agenda will include The Wine Edition, a wine tasting room, as well as cooking competitions for the Best Iberian Ham Croquette, Cooking with Mojos, Best Beer, Restaurant Bread and Signature Sandwich. The Sustainability and Innovation Award will also be presented, as well as the Revelation Chef 2023 and Revelation Pastry Chef 2023 awards, recognising new talent in the sector.
Main speakers
This year also, some of the world's most prestigious chefs will visit Ifema for Madrid Fusión. From Peru, chefs Virgilio Martínez and Pía León, and from Japan, the master of sushi, Takayoshi Watanabe, will offer their knowledge. Also attending the congress will be the Faroese chef Poul Andrias, the Italian Massimiliano Alajmo and the Spaniard Dabiz Muñoz, awarded with 3 Michelin stars at his restaurant DiverXO.
Get tickets for Madrid Fusión
You can attend Madrid Fusión 2023 with different types of tickets that you can buy on the official website. There are two types of passes to attend on-site:
- 3 days - 250€.
- 1 day - 100€.
The ticket includes access to the auditorium, the exhibition area, and the multi-purpose stage, as well as the Wine Edition and a workshop with prior registration. You can also participate online by purchasing a 3-day pass for €50, which gives you access to the live online event.
